Malaysian-style Roast Chicken Maryland

Here is an easy roast chicken dish for weeknight dinners.

Malaysian-style Roast Chicken


2 chicken marylands (approx 700g)

1/2 tbsp oil
1 1/2 tbsp light soy sauce
2 tsp kecap manis (or thick caramel soy)
1 tbsp lemon juice
1 tsp sugar
3/4 tsp salt
Dash of pepper

Blend together finely:
3 cloves garlic
1/2 onion
1/2 tbsp ground coriander
1/2 tsp ground turmeric


Combine chicken with marinade ingredients. Rub the blended ingredients all over the chicken. Leave in the fridge to marinade for 3-4 hours or overnight.

Preheat oven to 200C. Place chicken in a baking dish, skin side up, and roast for 50 minutes or until cooked. Halfway through cooking, use a brush to baste the chicken with the juices in the baking dish to keep it moist. Serve with steamed rice.
